Cosy Bunny No. 2


Here is another great example of the Cosy Bunny!



And look, a recipe for these delectable fairy cakes!

Butterfly Cakes

Ingredients:

125g butter

1 tsp vanilla essence

¾ cup castor sugar

2 eggs

1 ½ cups self-raising flour

½ cup milk

strawberry or raspberry jam (optional)

cream, whipped

strawberries

icing sugar


Method:

- cream butter, sugar and essence in a small bowl with electric beater until light and fluffy

- beat in eggs one at a time, beat until combined

- stir in half the sifted flour and half the milk, then stir in the remaining flour and milk

- put spoonfuls of mixture into patty pans, cook in moderate oven (180°C) for about 15 minutes.

-when cakes are cold, cut out a circle from the top, cutting down to a depth of about 2cm. Cut the circle piece in half, these are the butterfly ‘wings’

- place a small amount of jam in the bottom of the cavity, then whipped cream.

-top with the two wings, and a piece of strawberry in the middle

- dust with icing sugar
